for ease of use i would not use a pci coral. usb just is easier. passing the usb through to a dock or vm is easier. i use unraid and it was extra work to get the pcie vs usb coral setup. I have a nuc with a bunch of ssds for this kinda thing too.

What ever you do, remember the best experience is up to you at the end of the day. You will need to make sure you have used a cell map and find out where your internet towers will be. there are sites for this. also, use a decent antenna/modem. Get the antenna high in the air and pointed in the right direction. There are sites for cheep unlimited sims and others you can get that take a dedicated 5g/4g hotpots and make it appear as an iPhone for providers. I had a two sim card modem for the best setup.
Three versions that I know of have it but you’re right it’s not common. https://www.intel.com/content/www/us/en/support/articles/000091705/intel-nuc.html
the cold is helpful but moving the heat, but is the hard thing getting it away from the space craft. Since there is no atmosphere to take away your heat it just kinda sits there. If it is getting the suns rays it can be even more difficult. so basically it is quite hard.
